摘  要:用乙酸乙酯萃取法精制蛋黄磷脂,并用正交试验优化精制工艺。结果表明:在料液比1∶4,精制时间20 min,精制次数5次,精制温度0℃的条件下,精制效果最好,脱脂率达到95%以上,磷脂回收率达到98%以上。精制蛋黄磷脂中磷脂酰胆碱(PC)和磷脂酰乙醇胺(PE)含量分别为65.39%和13.05%。精制前后PC与PE含量比分别为5.14∶1和5.01∶1。因此,乙酸乙酯萃取精制能显著提高磷脂类物质的含量,但不改变各种磷脂类物质间的比例。Ethyl acetate was used to purify egg yolk phospholipids. The purfication process was optimized by orthogonal expriment. The results showed that the optimal conditions were as follows:ratio of solid to solvent 1 : 4, purification time 20 min, purification times 5, purification temperature 0 ~C. Under the optimal conditions, the defatting rate and phospholipids recovery rate were up to 95 % and 98% , respec- tively. The contents of PC and PE in finished phospholipids reached 65.39% and 13.05%, respectively. The content ratios of PC to PE before and after purification were 5.14:1 and 5.01:1 ,respectively. The results suggested that ethyl acetate could improve the content of phospholipids significantly but the ratios of them were not changed.
