摘  要:目的调查涉铅员工膳食营养素的摄入情况及其比例,为膳食指导提供依据。方法采用24h膳食回顾法,连续记录涉铅工人3d进食情况,用平衡膳食宝塔和《中国居民膳食营养素参考摄入量》评价。结果涉铅工人膳食中谷物、水果、蛋类和乳类的摄入量不足,肉鱼类较多,优质蛋白质占48.6%;蛋白质、脂肪和碳水化合物分别占18.0%、33.4%和48.6%;铁、锌、硒和钙的达标率为70.9%、64.3%、58.1%和4.3%;维生素E、C、B1、A、B2的达标率为95.2%、57.2%、31.8%、30.7%和19.7%。结论涉铅员工膳食摄入中蛋白质质量较好,脂肪偏高,碳水化合物偏低;钙严重不足,维生素B2、A和B1明显不足。涉铅员工膳食结构不够合理,有待指导干预。Objective To study the dietary nutrition intake and ratio in workers lead exposed for dietary guidance.Methods Food intakes for 3 days of the workers were continuous recorded by 24 h dietary recalling method and evaluated by "Balance Diet Pagoda" and "Chinese Dietary Reference Intakes".Results The intakes of grains,fruit,eggs and milk were insufficient,but meat and fish were rich.The ratio of high quality protein accounted for 48.6%.The ratios of protein,fat and carbohydrate were 18.0%,33.4% and 48.6%.The qualified rates of iron,zinc,selenium and calcium were 70.9%,64.3%,58.1% and 4.3%,and of vitamin E,C,B1,A and B2 were 95.2%,57.2%,31.8%,30.7% and 19.7% respectively.Conclusion In the battery enterprise,the protein intake shows good quality,fat is at higher and carbohydrate at lower level.Calcium is insufficient.Vitamin B2,A and B1 are insufficient obviously.The dietary nutrition intakes of the workers is not so reasonable,the dietary guidance and intervention should be carried out in the future.
