摘 要:采用传统平板计数法检测原料奶中的嗜冷菌,耗时长,不利于乳品工业控制乳制品的品质。建立1种快速检测方法十分必要。本文利用革兰氏阴性菌细胞壁上氨肽酶的特性,研究荧光假单胞菌、鲁氏不动杆菌和阪崎肠杆菌3类杭州地区原料奶中的优势嗜冷菌,其菌数和氨肽酶活性之间的线性关系,并在此基础上建立检测原料奶中嗜冷菌的快速检测方法。结果表明:原料奶中嗜冷菌菌数和氨肽酶活性之间存在显著的相关性,且氨肽酶法和传统平板计数法得到的检测结果之间不存在显著差异。氨肽酶法使检测时间大大缩短,是一种切实可行的快速检测方法。It takes too much time to detect the quantities of psychrophilic microorganisms in raw milk using conventional plate counting method, which is not good for controlling product quality in dairy industry. So it is very necessry to set up a rapid-testing method. Pseudomonas fluorescens, Acinetobacter lwoffii and Enterobacter sakazakii are dominant microorganisms at the pastures in Hangzhou district. This paper researched the relationships between quantities of three psychrophilic microorganisms and ainopeptidase activities based on the characteristic of ainopeptidase on Gram-negative bacterial cell wall. In the basis, the rapid detecting method was set up. Through statistical analysis, there were correlations between bacterial counts and ainopeptidase activities of the three microorganisms, and there was no significance difference between bacterial counts estimated by conventional method and ainopeptidase activity. The method based aminopeptidase activity greatly shortened the testing time than conventional method, so it is really a practicable rapid method of detecting psychrophilic microorganisms from raw milk.
