摘　　要：通过概述乌鳢的蛋白质及氨基酸、脂肪和矿物质的营养价值,探讨目前鱼类深加工利用的情况。随着乌鳢的深加工发展日益凸显,利用其营养价值,鱼蛋白、调味品、休闲小食品、鱼骨粉、生物利用度等方面将迎来快速的发展。This paper summarizes the Channa argus protein and amino acids, fat and mineral nutrition value, and from three aspects probes into the present situation of the utilization of fish processing. With the development of deep processing of the Channa argus increasingly prominent, the use of its nutritional value, fish protein, condiment, leisure snacks, fish meal, bioavailability, etc, will have rapid development.
