摘 要:本试验旨在开发新型环保型高蛋白饲料,主要以饲用产β-甘露聚糖酶酵母发酵后剩下的废酵母泥为原料,利用其蛋白含量高的特点,采用自溶方式增加其溶出蛋白,并添加豆粕作为膨化干燥剂制备高蛋白饲料。采用响应面法分析法对自溶时间、温度以及加水量进行优化,同时获得该酵母的最佳自溶时间23 h、自溶温度49℃,加水量59%,该条件下,考马斯亮蓝法测定该废酵母自溶产生的溶出蛋白质含量可达0.431 mg/mL,溶出蛋白占酵母泥干物质的质量分数为13.70%。自溶后的酵母泥再添加不同比例的豆粕进行干燥的实验。结果表明:添加质量分数100%的豆粕,在25℃下烘箱干燥,产品风味、色泽和硬度最佳,最终饲料产品的总蛋白质含量为49.10%,酵母溶出蛋白量为3.10%,含水量为5.70%,本文提供了一种有效的可工业化生产的高蛋白饲料生产方法。The factory produces a large number of the spent yeasts after the fermentation. The yeast has the advantage of high protein contents and low cost on the development of feed raw materials. In this study, feeding spent yeasts of β-mannanase production were studied after fermentation, and based on the characteristics of the high protein content, the spent yeasts were used as raw materials to produce high-protein feed with the way of autolysis for increasing soluble protein and adding soybean meal for water evaporation. The best autolysis conditions were obtained using response surface method (RSM) as follows : time 23 h, temperature 49~C, water addition 59%. Under such conditions, the content of soluble protein would reach 0.431mg/mL with Coomassie brilliant blue method and the soluble protein could account for 13.7% of the whole dry matter; After the autolysis, the drying experimental results of adding soybean meal showed that the addition of 100% soybean meal, temperature 25℃, natural product, the best productions could be obtained in flavor, color and hardness. Then we can get the end products: total protein content 49.1%, the dissolution protein of yeast 3.1%, water content 5.7%.
