摘  要:【目的】为了探讨乙烯利褪绿处理对沙田柚采后果实品质及衰老进程的影响,【方法】以沙田柚为材料,研究了经不同浓度乙烯利(500μL.L-1,1 000μL.L-1,1 500μL.L-1)处理后20℃下贮藏的沙田柚果皮叶绿素、类胡萝卜素含量,果肉可溶性固形物(TSS)、可滴定酸(TA)、维生素C含量以及果皮和果肉可溶性蛋白质、丙二醛(MDA)含量、超氧化物歧化酶(SOD)、过氧化物酶(POD)、过氧化氢酶(CAT)活性的变化。【结果】结果表明,与对照相比,乙烯利处理显著加快了沙田柚果皮叶绿素a、b含量的下降和类胡萝卜素含量的积累,促进了果皮转黄,明显提高了贮藏前期果皮SOD、POD和CAT活性,并使活性高峰提前,同时加速了贮藏后期果皮可溶性蛋白质的降解和MDA的积累。乙烯利处理对贮藏56 d的果实汁胞可溶性固形物、TA、维生素C、可溶性蛋白质含量以及42 d的POD、CAT活性与MDA含量影响不显著。【结论】乙烯利处理对沙田柚果皮褪绿效果明显,对果肉品质和衰老进程影响较小,1 000μL.L-1乙烯利对改善沙田柚果实采后褪绿有显著效果。[Objective]The objective of the study was to elucidate the effects of postharvest ethephon de- greening on qualities and senescence of Shatian pomelo(Citrus grandis Osbeck) fruits. [Method]Shatian pomelo fruits were treated with 500, 1000 or 1 500 ILL L-1 of ethephon and then stored at 20 ℃. Contents of pigments in peel, total soluble solids(TSS), total acidity(TA) and vitamin C activities of super- oxide dismutase(SOD), peroxidase(POD), catalase(CAT) and content of soluble protein and malondialde- hyde(MDA) in peel and pulp were investigated during storage. [Result]The results showed that, compared to the control, ethephon treatments significantly promoted the decrease of chlorophyll a, chlorophyll b contents and the inerease of carotenoid content, therefore enhanced peel color break. Ethephon signifi- ciantly increased aetivities of SOD, POD and CAT in peel during early period of storage and advaced their peaks. The decline in soluble protein content and accumulation of MDA were enhanced during late period of storage. However, ethephon degreening had no effect on contents of TSS, TA, VC and soluble protein in pulp during 56 days storage, nor had noticeable effect on activities of SOD, POD, CAT and MDA con- tent in pulp during 42 days storage. [Conclusion]The results suggested that ethephon obviously accelerat- ed color break of pomelo peel, but did not affect internal quality parameters and senescence in pulp. 1 000 txL L-1 of ethephon was the optimum treatment for postharvest degreening in pomelo fruits.
