摘  要:目的了解内江市食品中化学污染物的基本情况,为四川省食品安全风险监测网收集数据。方法采集32类248份内江辖区的食品,进行相关参数检测。结果猪肉中铜合格率100%,大米等食品中,汞测定值范围2.0×10-3~1.2×10-2mg/kg,铅合格率99.2%,镉合格率98.9%,馒头等5类食品20份样品中,铝总合格率为75.0%。合格率最低的是油炸面食类食品,仅为33.3%,4份油条铝合格率为0,最高超标4.1倍。金针菇中二氧化硫合格率为100%。酱腌制蔬菜、熟肉制品中亚硝酸盐合格率为84.0%,不合格食品均为熟肉制品,其亚硝酸盐合格率为73.3%。甜蜜素合格率77.3%,糖精钠合格率100%,5份葡萄酒4份果酒中,甜蜜素合格率分别为40.0%、50.0%。4份成人配方奶粉中,苯甲酸检出率为50.0%。7份酱腌制蔬菜中苯甲酸合格率100%。结论检测指标合格率最低的是油炸面食类食品中铝,其次是葡萄酒、果酒中的甜蜜素,第三为熟肉制品中亚硝酸盐。应加强食品污染和有害因素的监测工作。OBJECTIVE To understand the condition of chemical contaminants in food in Neijiang City and collect data for Sichuan Province food safety risk monitoring network. METHODS We collected 32 kinds of food in Neijiang area,in total 248 samples were tested. RESULTS The qualification rate of copper in pork was 100%. The qualification rate of lead was 99.2% and cadmium was 98.9% in rice,and mercury was between 0.002 to 0.012 mg/kg. As 20 samples of cooked wheaten food,the total qualification rate of aluminium was 75.0%. The minimum qualification rate of aluminium was 33.3% in deep-fried dough food,and even to 0% in 4 deep-fried dough sticks,the highest exceed the standard 4.1 times. Sulfur dioxide in needle mushroom was all qualified. The pass rate of nitrite in sauce pickled vegetables and meat products was 84%,and the substandard food was cooked meat,the qualified rate was 73.3%. Sodium cyclamate had the qualified rate of 77.3%,respectively 40% in 5 copies of wine and 50% in 4 copies of fruit wine. In addition,pass rate of saccharin sodium 100%,in 4 copies of adult formula milk powder,benzoic acid had a detection rate of 50%. Benzoic acid in 7 copies of sauce pickled vegetables were all qualified. CONCLUSION The lowest qualified rate of detection indexes is aluminium in deep fried dough food, followed by sodium cyclamate in wine and fruit wine,third is nitrate in meat product.It should strengthen monitoring on food contamination and harmful factors.
