摘　　要：《食品分析》是一门集技术性、操作性、科学性于一体的应用性课程,其内容相当丰富,涉及到食品如何处理、物理检验分析、蛋白质氨基酸分析、有害物质分析、灰分及矿物质分析、包装成分分析等。在课程研究实践的基础上,对课程进行了一些改进和对教学的建议。目前,发现该课程在教学中仍存在一些问题。为此,文章从课程教学目的,计划、方法及内容等方面对《食品分析》课程体系教学提出了几点建议。Food Analysis was a highly applied curriculum with technicality,strong operability and scientific.And the content of Food Analysis is quite abundant,including sample treatment,physchemical analysis,injurant and toxicant analysis etc..Currently,there were some problems in the teaching system of Food Analysis.Hence,some suggestions on teaching food analysis course were proposed from the perspective of teaching aim,plan,method and content.
