摘  要:目的了解某部队对外有偿服务单位餐饮从业人员食品安全知识掌握现况,为食品安全工作提供参考依据。方法随机选择在岗的1 828名餐饮从业人员进行问卷调查。结果从业人员食品安全知识得分为(71.02±12.65)分,及格率为70.24%。得分和及格率随文化程度、岗位工龄增长而相应增加,男性高于女性,小于20岁年龄组最低。各工种差异较大,卫生管理人员和厨师高于其他工种。结论该部队餐饮从业人员食品安全知识掌握情况尚可,应对文化程度较低、从业时间较短、年龄小的和清洗消毒岗位人员强化食品安全知识培训力度,规范其职业行为,养成良好食品安全习惯。[Objective]To understand food safety knowledge among catering industry staffs of the opening services in a troop,and provide reference for food hygiene and safety.[Methods]Questionnaire survey was conducted among 1 828 catering industry practitioners randomly.[Results] The score on food safety knowledge was(71.02±12.65),and the pass rate was 70.24%.Score and pass rate increased with the increasing level of education and job seniority.The score and pass rate for males were higher than those for females,and were both the lowest for people less than 20 years old.The score and pass rate for health managers and cooks were higher than those for other workers.[Conclusion]The level on food safety knowledge of catering industry practitioners in this troop is acceptable,It is necessary to help them strengthen food safety training,to regulate their professional behavior and form a good food safety habit,especially for those who have low-education,short service lengthen,younger or cleaning and disinfection staffs.
