进食被亚硝酸盐污染食品引起中毒流行病学调查报告

摘　　要：目的通过剖析此次食物中毒事件,总结应对中毒事件的经验,科学地处置中毒事件,降低危害程度。方法进行现场流行病学调查和病例对照研究,依据流行病学调查对相关物品采样,对相应项目进行实验室检测。结果从进食情况分析,并结合实验室检测结果,证实了该次事件是一起进食被亚硝酸盐污染食品所致的食物中毒。结论亚硝酸盐是一类引起食物中毒机率较高的无机化合物,相关职能部门应加强宣传,提高人们对亚硝酸盐的正确认识,并加强亚硝酸盐生产、销售食品添加剂亚硝酸盐等环节的监管,减少类似中毒事件的发生。Objective To through the analysis of the food poisoning event, and summary of coping poisoning event experience, scientific disposal of poisoning, then to reduce the harm degree, Methods Did field epidemiological investigation and case control study, according to related items sampled epidemiological survey, treat the corresponding item of laboratory detection.Results From feeding situation analysis, and combined with laboratory test results, confirmed the incident was eating nitrite pollution caused by food poisoning food. Conclusion Nitrite is a kind of food poisoning caused by the higher rate of inorganic compounds.The relevant functional departments should strengthen the propaganda, improve people to nitrite correctly, and strengthen the nitrite production, sales food additives such as nitrite supervision,reduce the poisoning incident.
