摘 要:研究牛毛水解物自由基的清除活性及对脂质过氧化的抑制作用。通过化学-酶协同水解制备牛毛水解物,并测定其水解度及分子质量分布;采用体外化学分析法,分别测定水解物对氮族自由基、氧族自由基及活性氧的清除活性和对卵黄源脂质过氧化的抑制作用。结果表明:试验条件下牛毛水解物具有较高的水解度和较低的分子质量,对受试自由基均表现出良好的清除活性,亦能显著抑制脂质过氧化的发生。该研究工作为牛毛的高附加值资源化利用提供新的途径。The bovine hair/keratin hydrolysate was prepared drolysis and molecular mass distribution was determined. The free by chemical - enzyme synergistic hydrolysis. The degree of hy- - radical scavenging and lipid - peroxidation inhibition activities of the hydrolysate were investigated. The performance of the hydrolysate to scavenge the nitrogen free radicals, oxygen free radicals and active oxygen as well as the inhibition activity to source of yolk lipid was measure with in - vitro evaluation method. It shows that under the experiment conditions the hydrolysate has high degree of hydrolysis and low molecular weight. And it has satisfacto- ry capacity in scavenging the testing free radicals and inhibiting lipid - peroxidation. All the results suggest that bovine hair could be used as a bioactive protein / polypeptide source for novel usage.
