摘　　要：本文建立了一种水产品中组胺的快速测定方法。水产品捣碎后用甲醇 /水直接提取 ,提取物经邻苯二甲醛衍生后 ,用反相 HPLC测定。方法的检出限为 0 .0 8mg/ kg,RSD(n=8)为 1 .8% ,1 2次测定的平均回收率为 83.6 %。在 2— 2 0 μg/ m L范围内 ,r为 0 .9999。A rapid method for the determination of histamine in aquatic products was developed.Sample was extracted with 50% methanol after trituration.The extract was derived with phthaldialdehyde(OPA) and then determined by reversed phase HPLC.The detection limit was 0.08 mg/kg .The relative standard deviation ( n =8) was 1.8% and the average recovery of histamine derivative( n =12) was 83.6%.The dependent coefficient of the linear function was 0.9999 in the range of 2—20μg/mL.
