摘 要:目的了解张家港市市售食品的污染状况。方法在全市10个监测点抽检25类食品514份样品,开展有害元素、食品添加剂、真菌毒素、微生物指标等20多项污染物的监测。结果抽检食品中镉、汞、砷、铬都没有超标,而蔬菜中的铅(超标率为5.84%)、食用菌中的二氧化硫(超标率为9.52%)、蜜饯中的二氧化硫和甜蜜素(超标率均为5.88%),以及鱼糜制品中的菌落总数(超标率为29.63%)超标较多。结论市售食品污染水平总体较低,但仍存在食品污染隐患,应采取针对措施,提高食品的安全性。OBJECTIVE To find out the current situation of market food contaminations in Zhangjiagang. METHODS 514 items from 25 kinds of market food samples were collected from 10 monitoring spots in Zhangjiagang. More than 20 items were examined including metal contamination, food additives, fungus toxins and microorganism. RESULTS Chemical contamination such as cadmium, mercury, arsenic, chromium in foods was not higher than standard limits. The main contamination issue at the present time included lead in vegetables ( over standard rate was 5.84% ) , sulfur dioxide in edible fungi ( over standard rate was 9.52%), sulfur dioxide and cyclamate in preserved fruits (over standard rate was both of 5.88%), and total numbers of colony in aquatic products (over standard rate was 29.63% ). CONCLUSION The overall level of contaminations in market food is low, but some foods are still contaminated. Pertinent measures should be taken to reduce the contaminations.
