摘 要:目的:了解宁波市售海产品中铅镉铜含量及卫生质量状况,为食品安全监管提供依据。方法:分别在宁波市区高塘、曙光、白沙三个菜市场采集114份海产品,采用石墨炉原子吸收光谱法测定铅、镉含量,火焰原子吸收法测定铜含量,并根据《无公害食品水产品有毒有害物质限量》中相关标准对海产品进行卫生质量评价。结果:海产品中铅镉铜总超标率为43.0%,其中牡蛎、香螺的超标率最高,为100%,其余依次是毛蚶、蚶子均为90.0%,海蟹为84.0%,贻贝为66.7%,泥螺为56.2%,其他几类海产品未见铅镉铜超标。结论:宁波市售海产品中未见铅超标,镉铜超标严重,主要集中于海蟹、贻贝、毛蚶、蚶子、牡蛎、泥螺和香螺等几类海产品。Objective: To investigate the contents of Pb, Cd and Cu in seafood and the hygienic quality of re- tailed seafood in Ningbo, and to provide the basis for food safety supervision. Methods : The contents of Pb and Cd were determined by graphite furnace atomic absorbance spectrometry, while the content of Cu was determined by flame atomic absorption spectrophotometry in 114 seafood samples collected from Gaotang market, Shuguang market and Baisha market of Ningbo. The hygienic quality of the seafood were assessed by "Limit standards of poisonous substances for pollution- free food and aquatic seafood". Results: The total over- limit ratio of Ph, Cd and Cu in the seafood was 43.0% , and 100% in oyster and neptunea cumingi, followed by blood clam (90.0%) , sea crab (84.0%), sea - mussel (66.7%), and bullacta exarata (56.2%). The contents of Pb, Cd and Cu in the other seafood were below the standard limits. Conclusion: The content of Pb in the retailed seafood in Ningbo did not ex- ceed standard limits, but Cd and Cu exceeded standard limits severely, and the unqualified were mainly sea crab, sea - mussel,, blood clam, oyster, bullacta exarata and neptunea cumingi crosse.
