摘 要:为了比较不同羊种和脂肪部位对脂肪源挥发性物质组成差异的影响,采用固相微萃取和气相色谱-质谱联用,测定湖羊、山羊和去势山羊皮下脂肪和肾周脂肪中挥发性物质。用主成分分析法、聚类分析法和方差分析法分析数据。测定结果表明皮下脂肪以醛类物质为主,肾周脂肪以醇类和烃类物质为主。通过主成分分析得出的主要挥发性物质——(E)-2-壬烯醛、(E)-2-辛烯醛、(E)-2-癸烯醛、壬醛、庚醛、辛醛和2-十一酮在湖羊皮下脂肪组织中显著高于山羊皮下脂肪。不论湖羊还是山羊,这些物质在皮下脂肪中的含量均显著高于在肾周脂肪。去势对山羊脂肪组织挥发性成分含量没有影响。Solid-phase microextraction technique and gas chromatography-mass spectrometry technique were used to extract and analyze the volatile compounds of the perirenal and caudal subcutaneous adipose tissues of Hu sheep, goat and wether. To investigate the effects of different species and adipose's location on volatile substances, principle compo- nent analysis, cluster analysis and ANOVA were used to analyze the data. The results showed that Aldehydeswere the main components of Subcutaneous fat, while Alcohols and Hydrocarbons were the main components of Perinephrit fat.(E) -2-Nonenal, (E)-2-Octenal, (E)-2-Decenal, Nonanal, Heptanal, Octanal and 2-Undecanone were found as the main volatiles, which were higher in subcutaneous adipose tissue of Hu sheep than in that of goat. No matter Hu sheep or goat,the levels of these volatiles were different between perirenal and subcutaneous adipose tissues. Castration had no effect on volatile content level in both adipose tissues.
