摘 要:摘要我国17个红小豆栽培品种胰蛋白酶抑制剂(TI)含量范围为236.0~541.1TIU/g,平均含量为410.8TIU/g;京农21、辽引红豆、XD1含量最高,分别为541.1、531.5、528.3TIU/g。明胶-PAGE活性染色表明红小豆有7种TI(A1~A7),主要组分为A4、A2和A6;品种间TI种类、丰度存在一定差异,产地北京的京农21有A2、A3,产地吉林白城的A2、A3含量低。红小豆TI提取液经沸水煮30min或pH1.5处理8h可以保持92.2%以上的活性。该研究结果表明我国有丰富的高产TI的红小豆资源,经烹煮或酸性条件处理仍可以保持很高的生物活性。17 cultivars of adzuki bean ( Vigna angularis ( L. ) R. Wilczek) in China contained 236.0 - 541.1 TIU trypsin inhibitors(TI) per gram of seed ,with an average value of 410.8 TIU. Adzuki beans Jingnong 21, Liaoyin and XD1 had the highest TI activity, which were 541.1,531.5 and 528.3 TIU/g, respectively. Gelatin - PAGE showed that adzuki bean had 7 TI (A, -A7 ) , A4, Az and A6 were the main component;the number and abundance ratio ot TI varied among cultivars and production places, Jinong 21 planted in Beijing had A2 and A3, but those planted in Jilin Baicheng had little A2 and A3. Adzuki bean TI were very stable, more than 92.2% of activity remained after 30 min in boiling water or 8 h at pH 1.5. China had abundant adzuki bean accessions with high activity of trypsin in- hibitor.
