北京鸭体尺指标与肌内脂肪含量及屠体性能关系的初步研究

摘　　要：为了在北京鸭W1品系选育过程中应用体尺指标选育肌内脂肪及屠体性能,试验测定了北京鸭W1品系30只公母鸭体尺指标与肌内脂肪含量及屠体性能指标,并进行了相关分析。结果表明:北京鸭W1品系母鸭胸肌厚与腿肌肌内脂肪含量相关系数为0.555 54,表现为极显著中强正相关(P<0.01);胸肌体积与腿肌肌内脂肪含量、胸肌率相关系数为0.514 32,0.612 40,表现为显著中强正相关(P<0.05);公鸭胸宽与胸肌重相关系数为0.581 20,表现为显著中强正相关(P<0.05)。说明在瘦肉型北京鸭选育过程中,要针对公母鸭单独制订育种目标,以加快北京鸭的选育速度,并尽量避免肉质退化。To apply the body - size traits to be selective breeding for the intramuscular fat and carcass performance during the breeding progress of W1 lines of Peking ducks, 30 male and female Peking ducks from the W1 lines were used to determine the three traits including body - size traits, the content of intramuscular fat and carcass performance, and then the correlation analysis Was performed. The results showed that the correlation coefficient between breast muscle thickness and the content of leg intramuscular fat （IMF） for the female ducks was 0.555 54, show- ing a highly significant moderately strong positive correlation（ P 〈 0.01 ） ; the correlation coefficients between the breast muscle volume, IMF and breast muscle percentage were 0.514 32and 0. 612 40 respectively, showing a significant moderately strong positive correlation （P 〈 0.05 ）. The correlation coefficient between the breast muscle width and breast muscle weight for the male ducks was 0. 581 20, showing a significant moderately strong positive correlation（ P 〈 0.05 ）. It is concluded that it is necessary to establish different breeding projects for different genders to accelerate the rate of breeding during the selective breeding of lean meat type Peking ducks, and to avoid the degeneration of meat quality.
