摘  要:用常规方法测定并分析了大菱鲆(Scophthalmus maximus)肌肉中营养成分组成与含量。结果显示,大菱鲆肌肉中水分含量为79.76g/100g,蛋白质含量为17.72g/100g,粗脂肪含量为0.78g/100g,灰分含量为0.95g/100g。肌肉中测出氨基酸17种(未测色氨酸),其中包括人体必需氨基酸7种(占氨基酸总量的37.88%),必需氨基酸组成基本符合FAO/WHO标准。大菱鲆的主要限制性氨基酸为缬氨酸和苏氨酸,其必需氨基酸指数(EAAI)为98.00,鲜味氨基酸占氨基酸总量的43.46%。脂肪酸中多不饱和脂肪酸含量为43.93%,其中EPA与DHA的总含量为28.90%。该结果表明,大菱鲆有较高的食用价值与药用价值。Nutritional components of Scophthalmus maximus muscle were analyzed with routine methods.The results showed that contents of moisture,crude protein,crude fat and ash from fresh muscles were 79.76,17.72,0.78g/100g and 0.95g/100g respectively.Except Tryptophan,17common amino acids were detected from muscle which include 7 essential amino acids for human body.The total content of amino acids was 19.30%; the content of essential amino acids was 7.33%;the percentage of essential amino acids in total amino acids was 37.88%.The constitutional rate of the essential amino acids accorded with the FAO/WHO Standard.The main limited amino acids of Scophthalmus maximus were Val and Thr.The essential amino acids index(EAAI)was 98.00.The content o f delicious amino acids in total amino acids was 43.46%.The content of polyunsaturated fatty acid in fatty acids was 43.93%.The total content of EPA and DHA in fatty acids was 28.90%.It was indicated that Scophthalmus maximus had high edible value and health effect and will be an important species for cultivation in the future.
