摘 要:研究了烘干、堆沤、阴干、晒干4种不同的油茶果采后处理方式对油茶籽油品质的影响。研究结果表明:油茶果采后直接晒干处理所得油茶籽含油率高,油茶籽油品质最好,烘干处理次之,二者差异不显著(P>0.05),但明显优于其他2种处理方式(P<0.01),二者油茶籽含油率分别为43.88%和43.67%,油茶籽油中的油酸含量分别为83.54%和83.42%,α-生育酚、β-谷甾醇和角鲨烯含量均较高,而传统的堆沤处理效果最差。因此,在实际生产中,油茶果采后应及时晒干,若遇天气不好时,应采用烘干处理。The effects of four treatments ( hot - air drying, retting, shade - drying, drying in the sun) of Camellia oleifera fruits after harvest on the oil -tea camellia seed oil quality were investigated. The resuits showed that the fruits dried in the sun had the highest oil content and oil quality, followed by that treated with hot - air drying, and the differences were not significant ( P 〉 0.05 ), but markedly better than the other two treatments ( P 〈 0.01 ), and the oil contents in oil - tea camellia seed treated by drying in the sun and hot - air drying were 43.88% and 43.67% respectively, the oleic acid contents in the oil were 83.54% and 83.42% respectively, the contents of a -tocopherol,/3 -sitosterol and squalene were higher than that with other two treatments and the effect of traditional retting was the worst. In practical production, harvested Camellia oleifera fruits should be dried in the sun timely, and hot -air drying should be used in case of bad weather.
