摘  要:目的了解包头市食品中食源性致病菌的污染状况和污染水平,初步确定高危食品的种类,为食源性疾病的监测提供科学的依据。方法按全国食品污染物监测网的工作手册,2010年-2012年采集16大类食品,共计877份,对沙门菌、金黄色葡萄球菌、蜡样芽孢杆菌、单核细胞增生李斯特菌、大肠杆菌O157:H7和副溶血性弧菌等12种食源性致病菌进行监测分析。结果 877份食品样品中,检出致病菌35株(3.99%)。其中,蜡样芽孢杆菌17株(1.94%),金黄色葡萄球菌8株(0.91%),沙门氏菌4株(0.46%),单核细胞增生李斯特菌6株(0.68%)。结论蜡样芽孢杆菌、金黄色葡萄球菌、单核细胞增生李斯特菌和沙门氏菌对包头市食品的污染普遍存在。熟制米面制品、生畜肉、肉制品的污染尤为严重,是重要的高危食品,对此应引起重视。Objective To learn the contamination status of food - borne pathogens in various foods of Baotou city and to find the high - risk foods, so as to provide scientific basis for effective prevention of the food - borne diseases. Methods Pursuant to the national manual for food - borne pathogen detection in food, twelve categories of food - borne pathogens, including Salmonella, Staphylococcus aureus, Waxy bacillus, Listeria monocytogenes, Escherichia coli 0157 : 1-17, Vibrio parahaemolyticus and others, were separated and identified from 877 food samples in 16 kinds from 2010 to 2012. Results A total of 35 strains of pathogenic bacteria were found in 877 food samples, the overall positive rate was 3.99%. They were 17 Waxy bacillus strains ( 1.94% ), 8 Staphylococcus strains(0.91% ), 4 Salmonella strains(0.46% ) and 6 Listeria monocytogenes strains(0.68% ). Conclusion Waxy bacillus, Staphylococcus aureus, Listeria monocytogenes and Salmonella were widely found in food of Baotou. The pollution of cooked rice and flour products, raw livestock meat and done meat products were particularly serious, need more attention.
