摘  要:目的调查舒巴坦敏感β-内酰胺酶(β-lactamase)的本底含量和添加状况,以期了解甘肃地区生鲜乳品的本底和添加水平。方法采集甘肃省牛奶养殖场(户)、乳品公司生产的乳头奶、原料奶、成品奶各50份样品,用杯碟法对舒巴坦敏感β-内酰胺酶进行定性和半定量分析。结果β-内酰胺酶检出率乳头奶为2.0%,原料奶为20.0%,成品乳为6.0%;其中奶厂1和品牌1为国家知名品牌,其原料奶β-内酰胺酶检出率为5.3%,奶厂2和品牌2、奶厂3和品牌3为省内品牌,其原料奶β-内酰胺酶检出率分别为23.5%及35.7%;品牌1与品牌2和品牌3内部管理和检测手段存在一定的差异,原料奶中β-内酰胺酶检出率也存在明显的差异。结论奶牛养殖户在原料乳和成品乳中属人为添加β-内酰胺酶,应该引起足够的重视;今后要加强奶源的管理,进一步做好牛奶的安全监控工作。Objective To investigate basal level and adding level of D-lactamase in raw milk in Gansu Province, so as to know the basal level and adding level in raw milk in Gansu Province. Methods Fifty samples of nipple milk, raw milk and milk products were collected from cow breeding farms and dairy manufactures, respectively. Cylinder plate method was used to qualitatively and semi-quantitatively detect for Sulbactam sensitive β-1actamase. Results Detection rate of β-lac- tamase was 2.0% of nipple milk, 20.0% of raw milk and 6.0% of milk products, separately, including detection rate of 5.26% of raw milk samples from milk factory No. 1 and milk brand No. 1, both of which are national famous brands. For raw milk samples from milk factory No.2 and brand No.2, and milk factory No.3 and brand No.3, all of which are provincial brands, the detection rate was 23.5% and 35.7%, respectively. There were differences in internal management and test methods and the significant differences in detection rate of β-1actamase in raw milk between brand No.I, No.2 and No.3. Conclusions Intentionally adding β-1actamase into raw milk and milk products should be given serious attention. Therefore, supervision management of milk source should be consolidated in the future for further improvement of milk safety surveillance.
