摘  要:金钻凤梨为台湾优质凤梨品种,营养好、品质佳,为消费者所喜爱,但其采后容易褪绿衰老,温度是凤梨贮藏保鲜的主要影响因素。为研究确定凤梨最适贮藏温度,试验将采后金钻凤梨分别贮藏于温度9,19,27℃条件下,进行定期取样和品质测定。结果表明,9℃下凤梨果实质量损失率一直在4%以下,而27℃时高达10%;9℃贮藏的凤梨的硬度、可溶性固形物下降速度显著慢于其他处理,并能维持较高的可滴定酸和VC含量。试验结果表明,9℃是金钻凤梨的最适贮藏温度。The Jinzuan pineapple is a high-quality varieties from Taiwan which is loved by consumers for its good quality and nutrition. But after its postharvest, chlorisis and aging developed. Storage temperature is the main factor that influence fresh-keeping of pineapples. In order to study the optimal storage temperature of the Jinzuan pineapples, the pineapples are respectively stored in the temperature of 9, 19, 27 ℃ in present test. Through regular sampling and quality determination, the result indicates that the weightlessness rate of pineapples remained below 4% in the temperature of 9 ℃ while 27 ℃ is as high as 10%. The falling speed of the hardness and soluble solids of pineapples stored in 9 ℃ is obviously the slowest of all, and can effectively maintained high titratable acid and VC. The result of the experiment indicates that 9 ℃ is the optimal storage temperature of Jinzuan pineapples.
