摘  要:以双孢蘑菇为试材,研究了离体情况下和采前喷施钙和精胺对双孢蘑菇褐变抑制率和贮藏品质的影响。结果表明,离体情况下,CaCl2和精胺对双孢蘑菇酶促褐变基本上无抑制作用,而采前喷钙和精胺处理组蘑菇的白度值较对照组下降缓慢,特别是在贮藏后期其白度值高于对照组;采前喷钙和精胺处理的双孢蘑菇在开伞率、多酚氧化酶活性、总多酚于贮藏后期体现出优势;采前喷钙和精胺更有效地抑制了双孢蘑菇的呼吸强度,用来衡量膜脂过氧化程度的丙二醛积累量始终维持在较低水平。采前喷钙较精胺对双孢蘑菇采后贮藏品质起着积极作用。The effects of in vitro and preharvest calcium chloride and spermine sprays on browning and of preharvest sprays on storage quality of A garicus b isporus were studied. The results showed that there were no inhibitory effects on browning in vitro, while, compared with the control group, the whiteness of the groups of preharvest calcium spray and spermine treatment decreased slowly, and especially higher during late storage. Cap opening rate, polyphenol oxidase activity and total polyphenol of preharvest calcium spray and spermine groups reflected advantage during late storage. Preharvest sprayings inhibited respiration intensity effectively, malondialdehyde (MDA) accumulation used to measure the degree of membrane lipid peroxidation always maintained at a lower level. From the overall level, preharvest sprayings played a positive role in storage quality.
