摘  要:为研究不同的糖类物质在烘烤前喷施对烤烟化学成分和香气物质的影响,选用秦烟96中部烟叶进行试验,设置5个不同的处理,测定烤后烟叶质体色素及香气物质含量.结果表明,与壳聚糖相比,烤前喷施10 g·L-1的蔗糖能够增加水溶性糖含量,降低含氮化合物含量,降低类胡萝卜素含量,增加烟叶香气物质含量.研究证明,烤前喷施糖类物质,对改善烟叶内在品质有积极作用;烤前喷施10 g·L-1蔗糖,有利于改善烟叶中化学成分的协调性,促进烟叶香气物质形成.In order to study the effects of different carbohydrate spraying before flue-curing on quality of tobacco leaves, using the middle flue-cured tobacco leaves of Qinyan 96 and setting five treatments, the plamochromic pigment, polyphenol and aroma component were analyzed. The results showed that compared with chitosan, using 10 g . L-1 sucrose before flue-curing would increase soluble sugar contents, reduce the nitrogen compounds content and the carotenoid content, and increase the aroma substances content. The results indicated that spraying carbohydrate before flue-curing had positive effect on improving the quality of tobacco leaves, coordinating the chemical composition and promoting the aroma substances.
