摘  要:对新疆驼乳中脂肪酸的组成和质量分数进行测定。采用哥特里-罗兹法提取乳中的脂肪,氢氧化钾-甲醇溶液法甲酯化,并采用气相色谱-质谱联用技术进行了分离鉴定。分离出35种成分,共确认了其中33种成分。采用峰面积归-化法确定了各成分的相对质量分数。结果表明:驼乳脂肪酸以中、长链为主,中链脂肪酸(C12-C16)相对质量分数在50%以上,长链脂肪酸(C18-C24)约占47%以上;饱和脂肪酸以棕榈酸、豆蔻酸和硬脂酸为主,质量分数占到总量的60.35%;不饱和脂肪酸以油酸为主,质量分数占39.65%,饱和脂肪酸与不饱和脂肪酸比为1.52:1.在新疆双峰驼乳中还存在质量分数约为13.34%的奇数碳脂肪酸。To determine the composition and mass fraction of fatty acids in Xinjiang camel milk, the fatty oils of camel milk were extracted by Rose-Gettlieb method and methyl-esterified by the method of potassium hydroxide-methanol solution, then analyzed by gas chromatogra- phy-mass spectrometry (GC/MS). 35 constituents were separated and 33 compounds were identified, the relative mass fraction of each com- ponent was determined by peak area normalization method. The results indicated that the major fatty acid are medium and long chain fatty acids, the content of medium-chain fatty acids (C12 - C16) is more than 50% , and long chain fatty acids (C18 - C24) accounted for more than 47%. Palmitic aci, nutmeg acid and stearic acid are major saturate fatty acid, and the content reached 60.35%. Oleic acid is major unsaturated fatty acid and the content reached 39.65%. The ratio of saturated fatty acids and unsaturated fatty acids is 1.52:1. The odd number carbon fatty acids are also contained about 13.34% in xinjiang bactrian camel milk.
