摘  要:本文采用实验方法测量了番茄真空冷冻干燥曲线 ,并针对番茄升华干燥过程建立了辐射边界条件下的准稳态模型。理论模型的计算结果与实验结果符合较好 ,得到的干燥工艺曲线 。WT9.,8.7BZ]The process technology of the vacuum freeze dried tomatoes was experimentally and theoretically investigated. The freeze drying curves of tomato slabs with different thickness were measured. Meanwhile, a freeze drying model with radiation boundary conditions was adopted to predicted the sublimation dehydration time. The calculated sublimation dehydration time was compared with experimental results and achieved reasonable agreement. The experimental and theoretical results of the freeze drying curves are of practical importance in designing freeze drying technology flow of tomatoes.
