摘　　要：本文研究了云南野生羊肚菌的营养成分 ,结果表明羊肚菌富含蛋白质、氨基酸、多糖、脂肪酸和矿物元素 ,并以之为主要原料研制了保健食品—羊肚菌胶囊。动物试验表明 ,羊肚菌胶囊具有免疫调节、抗疲劳保健功能。The nutritional compositions in the fruit body of Morchella esculenta were detected in this paper.The results showed the fruit body contains abundant nutritions:proteins,amino acids,polysaccharides,faty acids and mieral.Based on the determination and analysis,the bealth food was prepared with Morchella fruit body as main raw material.The animal experiment showed,the Morchella capsule had the function of the regulate immunization and antifatigue.
