摘　　要：甜瓜籽富含油脂,且其油中不饱和脂肪酸含量较高,可以作为药食两用的保健油源加以开发。综述了近年来国内外有关甜瓜籽油的化学组成、理化性质、提取方法以及生理活性等的研究报道,并对甜瓜籽油研究开发提出建议,以期为我国甜瓜籽油的精深加工利用提供参考。Muskmelon seed is rich in oil, and the unsaturated fatty acids content is high in muskmelon seed oil, which can be explored as a healthy oil source both for food and drug. Chemical compositions, physicochemical properties, extraction technologies and physiological activities of muskmelon seed oil at home and abroad in recent years were reviewed, and several suggestions for the research and development of muskmelon seed oil were put forward so as to provide references for the utilization and deep processing of muskmelon seed oil at home.
