摘  要:对中国江淮流域与位于茶树起源地带中心的云南地区茶叶利用方法历史演变进行比较分析,提出茶的食物特征和饮料特征及文化特征强弱互现是茶利用技术演进的一条主线;根据历史文献并首次通过考察云南遗存的传统习惯用茶方法,来还原我国唐代以前其它地区的茶叶利用方式;提出烟草流入我国对于普洱茶清代贡茶地位的形成有一定相关性,并对近代普洱茶制作方法的演变及其原因进行了考察。To compare and analyse tea utilization method and its historical evolution between the Yangtze-Huaihe river basin and Yunnan area which is well known as the centre area of the tea trees headstream zone; To propose the tea's foods feature ,beverage feature and cultural feature and that their mixed obviousness and unobviousness is a red thread weaving through the evolutuion of the tea's utilization of technology;According to historical literature and through investigating the Yunnan remains of traditional habits on tea utilization, to restore the original tea culture of other places in China before the Tang dynasty; to propose that the tobacco' s flowing into China are of some relevance to the formation of status of Pu' erh tea as the tribute tea in Qing dynasty, and also to investigate the evolution of modem Pu'erh tea processing methods and its reasons behind.
