2013年昆明市一次性餐饮具卫生状况监测分析

摘　　要：目的监测昆明市五区一次性餐饮具卫生状况,为食品安全风险控制提供数据。方法随机抽检昆明市下辖5个区餐馆、饭店、酒楼等餐饮店使用的一次性纸质餐饮具80件,一次性塑料餐饮具30件,检测国标要求的卫生指标。结果抽检的80件一次性纸质餐盒有8个厂家生产的18个品种,其中云南省生产厂家有5家,一家外省厂家,两个品种餐盒未注明厂家,一次性纸质餐盒所检理化项目和微生物项目全部合格,合格率达100%;一次性塑料餐盒检测有一件样品蒸发残渣(正己烷,20℃,2 h),检测结果为364 mg/L,超标12.13倍,合格率96.7%;其余理化项目检测结果全部合格,合格率100%。结论昆明市五区使用的一次纸质餐盒和塑料餐盒卫生达标情况较好,合格率较高,质量达标情况较好。Objective To monitor the hygiene condition of disposable dinner and drinking sets in 5 districts of Kunming, and provide data for food safety risk control. Methods Eighty one - off paper - based dinner and drinking sets and 30 one - off plastic dinner and drinking sets were selected randomly from restaurants and dinning - rooms of 5 districts in Kunming for hy- giene detection in accordance with national standards. Results The microorganism items and physicochemistry items were all qualified in 80 paper - based dinner and drinking sets, and the qualified rates were 100%. There was one unqualified sample in plastic dinner and drinking sets. The evaporation residue of this unqualified sample was n - hexane （20 ℃, 2 h）, which was 364 mg/L and 12.13 times of the national standards. The rest physicochemistry items all met the national standards. Conclu- sion The overall hygiene situation of one - off paper - based tableware and one - off plastic tableware is better in 5 districts of Kunming city, with higher pass rates and good hygiene quality.
