摘  要:使用X-5大孔树脂提纯落叶松多酚提取液,得到纯度为71.4%的落叶松多酚纯化物,比较了温度、pH和多酚与金属离子的质量比对螯合反应的影响。结果表明:落叶松多酚与Ca2+和Zn2+螯合的最佳温度分别是50℃和60℃、pH值为6.0、质量比为30:1,此条件下金属离子螯合率依次为36.43%与47.51%。在DPPH自由基清除能力方面,Zn2+螯合物较落叶松多酚的抗氧化活性略微提高;在羟基自由基清除能力方面,金属离子配合物的抗氧化活性有不同程度的提高,其中Ca2+配合物的抗氧化活性强于Zn2+配合物。Purified through the way of X-5 resin separating, larch polyphenols could reach a purity of 71.4%. Effect of temperature, pH and quality ratio between larch polyphenols and metal ions on chelating reaction were investigated. Results showed that the optimum temperature for the chelating reaction of larch polyphenols with Ca^2+ and Zn^2+, respectively, were 50 % and 60 ℃, pH 6.0 and quality ratio 30:1. Under these conditions, yield of chelation of metal ions were 36.43% and 47.51%. The antioxidant activity of chelate with Zn^2+ was higher than that of larch polyphenol on scavenging DPPH. free radicals. On hydroxyl free radicals (.OH), The antioxidant activity of chelate of metal ions heightened in different degrees, among of which the antioxidant activity of chelate with Ca^2+ was higher than that with Zn^2+.
