摘　　要：地沟油对人体健康具有极大危害,如何对市场上地沟油进行检测和管理一直是一个难点。综合分析了当前地沟油提炼流程和危害性,阐述了现有的主要检测方法及其特点,并针对地沟油应对的难点提出了建议和对策,旨在更加鲜明突显地沟油危害的同时,为今后合理化应对地沟油问题提供基本依据和建议。The illegal cooking oils do great harm to human health, how to deiect and mar^ge-theillegal cooking oils on the market is always a challenge. The article based on the literature review makes a comprehensive analysis to the current refining process and dangers of the illegal cooking oil, summarizing the primary detection methods and characteristics nowadays, and give some advices and measures on how to solve the problem of illegal cooking oil so as to further highlight the hazards and provide the fundamental details and advices for the reasonable resolution on the problem of the illegal cooking oil.
