摘 要:以副干酪乳杆菌R8为研究对象,筛选了冻干保护剂、益生元等包埋助剂,优化了微胶囊的包封方法,并采用喷雾法将包埋液喷入固化液覆膜固化,制备出耐胃液、可定向释放的乳酸菌微胶囊,为规模化生产乳酸菌微胶囊制剂提供了新方法.筛选出的最佳冻干保护剂为全蛋液,最佳益生元为菊粉;喷雾法制备微胶囊的条件为:喷雾压力0.2~0.3 MPa,包埋液流量30 mL/min;最佳的包埋液配方为:菌泥5%,菊粉2%,全蛋液20%,海藻酸钠1%;最佳的固化液配方为:壳聚糖0.5%,CaCl2 2.5%,乙酸1%.In order to provide a new method for large-scale production of lactic acid bacteria microcapsule, acid resistant and directional release microcapsule of Lactobacillus paracasei R8 was prepared by screening the cl-yoproteetant and prebiotics, optimizing the embedding method, and using spray method to solidify the microeapsule. The optimal cryoproteetant was whole egg liquid, and the optimal prebiotic was inulin. Microcapsule preparation conditions were as following spray pressure was 0.2-0.3 MPa, embedding liquid flow rate was 30 mL/min. The optimal composition of embedding liquid was bacteria sludge 5%, inulin 2%, eggs 20%, sodium alginate 1%. The optimal composition of solidifying liquid was chitosan 0.5%, CaCl2 2.5%, acetic acid 1%.
