摘 要:目的研究滇产螺旋藻的的营养价值特征。方法以山东产某品牌螺旋藻作为对照品,对6种滇产螺旋藻的营养组成进行分析。结果所有的滇产螺旋藻均能满足国标要求,但营养特性有一定差异。由于能提供高蛋白质及无机元素同时提供较低碳水化合物和脂肪,螺旋藻是健康的食物来源。所有样品均含有十八种氨基酸。对于滇产螺旋藻,氨基酸总量平均值为43.28%,EA/AA为39.63%,EA/NA为65.70%,接近WHO/FAO模式参考值。缬氨酸或蛋氨酸+半胱氨酸为第一限制性氨基酸。结论滇产螺旋藻是优质的蛋白质和氨基酸来源。基于数据,可进一步调整限制性氨基酸配方,改善营养。Objective To study the nutrition value of spirulina tablet produced in Yunnan. Methods By using spirulina of Shandong as control product, the nutritional compositions of six kinds of spirulina produced in Yunnan were analyzed. Results All the spirulina samples of Yunnan can meet the GB standard, but there were differences in the nutrition characteristics among these samples. Spirulina was a kind of healthy food, providing abundant proteins and inorganic elements as well as low carbohydrates and fats. All the spirulina samples contained 18 amino acids. For Yunnan spirulina samples, the average of total amino acid content was 43.28%, the average EA/AA was 39.63%, the average EA/NA was 65.70% , close to the reference values of WHO/FAO model. Val or Glu + Cys was the first limited amino acid. Conclusion Spirulina of Yunnan is a good supply of proteins and amino acids. Based on the data, the nutrition level could be further improved by limiting prescription of amino acid.
