食品审美对食品安全的文化制衡

摘　　要：食品安全与食品审美是一种相互制衡关系,其中,食品审美对食品安全的文化制衡尤其应该引起我们的重视。从存在方式上讲,食品安全更多借助法律、制度和法规来健全完善食品安全的防范体系,食品审美则更多地借助文化的心理内化,潜移默化地引导提升人们的饮食行为和习惯。前者的强制性、现实性、自制性与后者的自由性、潜在性、选择性,具有内在的矛盾冲突。食品安全意识及食品完全的法规对于保障人类健康文明的生活是必要的,但食品安全焦虑则对人类的饮食有负面袭扰作用,加之食品安全法规的单一化、行政实施的僵硬化,都说明仅仅靠食品安全是不够的,补足的对策及途径是食品审美。食品审美不仅可以缓解食品安全焦虑,而且可以通过食品审美文化从根本上解决食品安全法规不能涵盖的对象。在食品生产技术化趋势下,食品审美与食品安全的协同,应是保障人类饮食安全与文明质量最恰切的选择。Food safety and food aesthetics share a relationship of checks and balances. We should particularly pay much attention to the cultural counterbalance from food aesthetics to food safety. In terms of its existence, we have improved and perfected the prevention system for food safety by more rules, regulations and laws. And food aesthetics unconsciously guides and enhances people＇s eating behavior and habits through psychological internalization of culture. Food safety, which is mandatory, real and self- controlled, has inherent conflicts with food aesthetics as the latter one is free, potential and selective. The awareness and laws for food safety is essential to ensure people＇s healthy and civilized life. But the anxiety for food safety has a disturbing side effect on people＇s diet. Additionally, the regulation for food sa{ety is simplified, and administrative implementation is rigid. All these have manifested that mere food safety is far from enough, and our complementary measure and approach is the food aesthetics. Food aesthetics can not only ease the anxiety for safety, but also, through food aesthetic culture, fundamentally solve the problems which cannot be covered by laws and regulations. In the trend of the production technology for food, the synergy of aesthetics and safety should be the most appropriate choice to ensure people＇s diets and civilization.
