头足类海产品中化合物和生物毒素与食源性腹泻相关性研究

摘　　要：目的了解宁波市市售头足类海产品中引起腹泻的化合物和生物毒素污染现状,探讨其与食源性腹泻之间的关系。方法 2008年12月—2009年11月在宁波市6个行政区内采集122份头足类海产品标本进行7种化学指标监测,包括挥发性盐基氮(VBN)、组胺(HIS)、吲哚(Indole)、麻痹性贝类毒素(PSP)、神经性贝类毒素(NSP)、软骨藻酸毒素(ASP)和腹泻性贝类毒素(DSP),并与同期监测的食源性腹泻报告病例数据进行相关性分析。结果所有化学指标在4个季度之间差异均有统计学意义(P<0.05)。ASP与VBN、ASP与PSP以及DSP与NSP之间具有相关性(P<0.05)。食源性腹泻与VBN、NSP及ASP具有正向相关性。结论 VBN、NSP及ASP是食源性腹泻的重要危险因素,应加强对头足类海产品VBN、NSP及ASP的监管和指导,确保消费者的食品安全和身体健康。Objective To investigate the pollution situation of chemical compound which could cause diarrhea from cephalopod marine products sold in markets, and to explore the relationship between chemical compound and biological toxins of cephalopod marine products and food - borne diarrhea. Methods A total of 122 specimens of cephalopod marine products from markets in 6 districts of Ningbo from December 2008 to Novenber 2009 were detected for 7 chemical indices, including volatile basic nitrogen （VBN）, histamine （HIS）, indole, paralytic shellfish poisoning （PSP）, neurotoxic shellfish poisoning （NSP）, domoic acid shellfish poisoning （ASP） and diarrheic shellfish poisoning （DSP）. Correlation analysis between chemical compound and biological toxins of cephalopod marine products and food - borne diarrhea were conducted. Results All the indices were statistically significantly different among four seasons （ P 〈 0. 05 ）. The correlations were found between ASP and VBN, ASP and PSP as well as DSP and NSP （ P 〈 0. 05 ）. The food - borne diarrhea cases were positively related to VBN, NSP and ASP. Conclusion VBN, NSP and ASP were the important risk factors of food - borne diarrhea. Supervision should be strengthened especially on VBN, NSP and ASP of cephalopod marine products to ensure the food safety and health of consumers.
