摘 要:小麦高分子量麦谷蛋白是谷蛋白大聚合体(GMP)的主要成分,与小麦面筋和烘烤品质性状等密切相关。本研究在底施氮肥的基础上,设起身期追氮、起身期追氮+化控、拔节期追氮、拔节期追氮+化控4个处理,3次重复,并采用双缩脲法测定不同处理下的小麦GMP含量,同时测定籽粒沉淀指数和湿面筋含量,并且分析了小麦产量和产量构成因素。结果表明:拔节期追氮+化控处理下小麦产量最高,拔节期追氮处理下的小麦产量与最高产量差异不显著,但GMP含量、湿面筋含量、沉淀指数均最高,分别为1.290 4mg/mL、33%、21.9mL。因此,拔节期可以作为兼顾高产与优质的最佳追氮时期。High molecular weight glutenin, closely related to gluten and baking quality charac- teristics of wheat, is the main component of the glutenin macropolymer (GMP). In this paper, four treatments with three repeats were designed to study the effects on yield and quality of wheat. Four treatment groups were nitrogen topdressing at establish stage and jointing stage, nitrogen application with spraying at establish and jointing stages based on the nitrogen used in basal fertilizer. Biuret method was used to determine the content of GMP in the different treat- ments. Other quality characteristics such as gluten content, sedimentation and yield compo- nents were also analyzed. The results showed that the wheat yield based on the nitrogen appli- cation with spraying at jointing stage was higher than others, the difference of yield between nitrogen topdressing and nitrogen application with spraying at jointing stage was not signifi- cant. And GMP content, gluten content, sedimentation among these four treatments, re- spectively 1. 290 4 mg/mL, 33~, 21.9 mL, were the highest under the nitrogen topdressing atjointing stage. Therefore, consideration to high yield and good quality, jointing stage could be used as the optimum period of nitrogen topdressing.
