摘  要:采用响应面分析法优化超声波辅助提取红肉苹果花青苷的提取工艺。以花青苷的含量作为响应值,在单因素试验基础上,根据Box-Behnken中心组合试验设计原理采用4因素3水平的响应面分析法对各因素进行分析,结果表明,红肉苹果花青苷的最佳提取条件为丙酮体积分数80%,料液比1∶14(g∶mL),超声时间32min,盐酸含量1.2%,在此条件下提取的花青苷的质量浓度为7.01mg/100mL,与响应面预测理论值(7.09mg/100mL)相当。Response surface methodology was used to optimize the process for the solvent extraction of anthocyanin from red-flesh apple with ultra- sonic assistance. Taking cyanine glucoside content as response value, on the basis of single factor experiment, Box-Behnken central composite design and four factors three levels response surface analysis theory to optimize the anthocyanin extraction process. Result showed that the optimum condi- tions for anthocyanin extraction were determined as follows: acetone concentration 80%, solid-liquid ratio 1:14 (g/ml), extraction time 32 min, and acid concentration 1.2%. Under such condition, the concentration of anthocyanin was 7.01 mg/100 ml, close to the predicted value 7.09 mg/100 ml.
