摘 要:试验通过测定血清氧化应激参数,胸肌、腿肌营养成分及肝脏、胫骨、中趾骨中矿物质含量,旨在比较云南普洱瓢鸡、腾冲雪鸡、无量山绿耳乌鸡的组织营养成分、骨骼矿化程度和抗氧化应激参数。结果表明,三黄鸡血清T-AOC、T-SOD极显著低于三种地方鸡种(P<0.01),而MDA显著高于地方鸡种(P<0.05);三种地方鸡种中,瓢鸡T-AOC、T-SOD和GSH-px最高,绿耳鸡MDA最低。普洱瓢鸡、腾冲雪鸡和无量山绿耳鸡胸肌、腿肌DM极显著高于三黄鸡(P<0.01);普洱瓢鸡胸肌和腿肌CP均极显著高于腾冲雪鸡、无量山绿耳鸡和三黄鸡(P<0.01);三黄鸡腿肌EE极显著高于三种地方鸡种(P<0.01)。三黄鸡肝脏Fe和Zn极显著低于三种地方鸡种(P<0.01)、而肝脏Cu和Mn极显著或显著高于三种地方鸡种(P<0.05);三种地方鸡种胫骨、中趾骨灰分、Ca、P、Fe、Cu、Mn、Zn均显著高于三黄鸡(P<0.05)。本试验证明,地方鸡种与三黄鸡之间血清T-AOC、T-SOD、GSH-Px和MDA具有明显差异;鸡肉营养成分、肝脏和骨骼中矿物质含量均有明显差异。结果提示,地方鸡种骨骼具有良好的矿化程度,中趾骨可作为高原地方鸡种骨骼矿化程度的标识;地方鸡种具有较强的抗氧化能力;地方鸡种肉品质值得进一步研究。In this experiment, the tissue nutrients, the degree of bone mineralization and the oxidative stressed parameters of Puerpiao chicken, Tengchongxue chicken and Wuliangshan green-ear black bone chicken were compared through determining the oxidative stressed parameters of serum, compositions in pectoral muscle and leg muscle, the content of minerals in the liver, tibia and phalanges. The results showed that the T-AOC, T-SOD in serum of Sanhuang chicken were significantly lower than those of three local breeds (P〈O. 01) ,while MDA significantly higher than those of local breeds (P〈0.05). Among the three local breeds, the T-AOC, T - SOD and GSH -Px of Piao chicken were the highest, and the MDA of green-ear black bone chicken was the lowest. DM in breast muscle and leg muscle of Puerpiao chicken, Tengchongxue chicken and Wuliangshanlver chicken were significantly higher than those of Sanhuang chick- en (P〈0.01),CP in breast muscle and leg muscle of Puerpiao chicken were significantly higher than other three breeds (P〈0.01). EE in leg muscle of Sanhuang was remarkably higher than that of three local breeds (P〈0. 01). Fe and Zn in liver of Sanghuang chicken were remarkably lower than those of the three local breeds (P〈0. 01), while Cu and Mn in the liver were extremely or significantly higher than those of three local breeds(P〈0. 05). The ash, Ca, P, Fe, Cu, Mn and Zn in the tibia and phalanges of three local breeds were extremely or signifi- cantly higher than those of Sanghuang chicken(P〈0. 05). This experiment proves that there are obvious differ- ences on T-AOC,T-SOD,GSH-Px and MDA of serum between the local breeds and Sanhuang chicken. And obvi- ous difference exists among nutrients, mineral contents in Liver and bone. These results suggest that the bone of lo- cal chicken breeds has a better degree of mineralization, and the phalanges can be used as an identity for bone min- eralization degree for plateau local breeds.
