摘  要:蓝莓又名越桔,杜鹃花科越桔属植物,极高具有的抗活氧化性,富含大量的营养,随着蓝莓生产规模的扩大,采摘期的集中,蓝莓销售难,易挤压腐烂的问题凸显,影响了蓝莓产业的良性发展。作为一种营养成分丰富的多功能水果,其保鲜贮藏越来越受到广泛的重视。目前蓝莓保鲜最常用的方法有冷藏法、气调法、涂膜法、高压、辐射法等。而涂膜法是一种新兴的果蔬保鲜法,操作简单,投资极低,可少量处理,也可大量贮藏,壳聚糖是一种天然的高分子聚合物,属于氨基多糖,是可再生的资源,是天然成膜材料,无毒、成本低、易操作,有显著的保鲜效果,本实验采用壳聚糖涂膜对蓝莓保鲜后的硬度、含水量、酸度、维生素C、好果率等各种指标进行测定,分析壳聚糖简单膜和复合膜对蓝莓保鲜效果的影响。Blueberry,an alternate name is bilberry,the plant of Vaccinium of Ericaceae,it has a very high living oxidation resistance,and contains a lot of nutrition.With the expansion of the blueberry production,concentrated picking period,cause sales difficult and easy to be squeezed decay,Affected the healthy development of blueberry industry.Blueberry is a kind of multifuncdonal fruit,which is rich in nutrition.Its fresh-keeping storage attracts more and more attention.At present,the most commonly used methods of blueberry fresh-keeping is refrigeration method,air conditioning method,coating method,high pressure,radiation method etc..Coating method is the newest fresh-keeping methods of fruits and vegetables,with the advantages of simple operation,low investment,small amount of processing,and large amount of storage.Chitosan is a natural polymer,belonging glycosaminoglycan,is a renewable resource and a natural film-forming material,non-toxic,low cost,easy to operate,there are significant preservation effect through this experiment,various indicators,such as hardness,water content,total acidity,vitamin C content,rate of the good fruit,of Chitosan coating on blueberry fresh-keeping were determined.The effects of simple and composite membrane of Chitosan on blueberry fresh-keeping are anglicized.
