四角蛤蜊的营养性和安全性评价

摘　　要：四角蛤蜊是一种高蛋白低脂肪的贝类,含有多种矿物质元素;EAA/TAA百分含量为30.2%,EAA/NEAA百分含量为43.3%,不能达到FAO/WHO公布的EAA/TAA百分含量40%左右、EAA/NEAA百分含量60%以上的氨基酸理想模式,氨基酸价为67,低于其他一般贝类,可见四角蛤蜊存在着氨基酸的不平衡性,但四角蛤蜊中鲜味氨基酸含量高达55.4%,可开发为调味料;四角蛤蜊重金属含量符合限量标准,应注意污染问题,可以作为重金属污染物监测指示物。Maoctra Veneriformis is a kind of molluscs with high protein, low fat and many minerals, its EAA/TAA 30.2%, EAA/NEAA 43.3% can＆#39;t get to the amino acids ideal mode of EAA/TAA 40% or so, EAA/NEAA more than 60% issued by FAO/WHO, and its amino acid value 67 is lower than any other molluscs. The results show that there existed amino acids imbalance in Maoctra Veneriformis, and Maoctra Veneriformis is not quality protein needed by mankind nutrition but can be developed to be marine seasoning considering as high as 55.4% delicious amino acids in it. On the other hand, the content of heavy metal in Maoctra Veneriformis show that the heavy metal pollution should be considered while it can provide reference action on being a monitoring index of heavy metal pollution.
