摘 要:研究采用Gasbench联用同位素质谱仪(Gasbench-IRMS)检测了3个不同品种葡萄汁在实验室模拟发酵前后水中δ18O,结果表明,发酵前后水中δ18O变化小于0.1‰;掺入外源水后,其水中δ18O呈现明显且良好的线性负相关变化,预测模型能够判断至少10%的掺水量,且与实际掺水量的误差在±1%左右。水中δ18O可以作为鉴别葡萄酒是否添加外源水的客观指标。不同产区葡萄汁样本水中δ18O存在较大差异,能够作为葡萄酒产地鉴别的有效依据。结果证明了稳定同位素技术能够作为葡萄酒真实性鉴别的有效手段,通过建立各产地品种葡萄汁的δ18O同位素数据库,为全汁葡萄酒及产地葡萄酒鉴定方法和标准的建立提供技术支撑。In this study,δ^18O of water in grape juice of 3 different species was detected before and after lab simulated fermentation by use of GasBench-IRMS.The results suggested that,the change ofδ^18O of water was less than 0.1 ‰ before and after the fermentation.However,after the addition of exogenous water in grape juice before the fermentation,δ^18O of water would decrease and had a significant linear relationship with the addition of exogenous water.The prediction model could predict at least 10 % watering value,and the error between actual watering value and the predicting value was only about 1%.Accordingly,δ18O of water could be used as the objective indicator to judge whether exogenous water wasadded in grape juice for grape wine production.On the other hand,there was great difference in δ^18O of water in grape juice of different producing area,so δ^18O of water could be effectively used for the discrimination of grape wine producing places.In practice,we could annually collect grape of every producing place,detect their δ^18O of water,and establish their δ^18O data bank,which would provide technical support for the discrimina tion of whole-juice grape wine and the producing places of grape wine,and the establishment of the discrimination standards.
