摘  要:[目的]开发一种口味独特、营养丰富的复合凉茶。[方法]以西瓜翠衣、夏枯草、甘草、菊花、金银花为主要原料,添加适量的其他配料研制凉茶。以感官评价为指标,通过正交试验确定了夏枯草汁的提取工艺和西瓜翠衣凉茶的最佳配方。[结果]试验表明,夏枯草汁最佳提取工艺为:90℃下50倍加水量浸提30 min;西瓜翠衣凉茶的最佳配方为:混合汁40%(西瓜翠衣汁∶金银花汁∶菊花汁∶甘草汁∶夏枯草汁=4∶3∶3∶1∶1)、柠檬酸0.02%、白砂糖1%、抗坏血酸0.1%。[结论]该工艺配方下制得的西瓜翠衣凉茶产品色泽亮丽且呈棕黄色,口感优良、风味独特、香味浓郁、营养丰富、质量稳定。[Objective] To develop a compound herbal tea with unique taste and rich nutrition.[Method] With watermelon peel,selfheal,licorice,chrysanthemum and honeysuckle as the raw materials,adding the appropriate other supplementary materials,the herbal tea was developed.With sensory evaluation as indicators,through orthogonal test,the optimum formula of selfhea juice extraction technique and watermelon peel herbal tea was determined through orthogonal test.[Result] The optimal extraction technique for selfhea juice is at 90 ℃ and 50 doubly water for 30 min.And the optimum formulation for watermelon peel herbal tea was 40% of the juice of watermelon,honeysuckle,chrysanthemum,licorice and selfhea with ratio of 4∶ 3∶ 3∶1 ∶ 1,0.02% of citric acid,1% of sucrose and 0.1% of ascorbic acid.[Conclusion] The obtained watermelon peel herbal tea has characteristics of bright color,brownyellow,good taste,unique flavor,strong aroma,rich nutrition and stable quality.
