摘　　要：水溶性β-1,3-葡聚糖具有独特、优越的生理及药理活性。现将以水不溶性酵母β-1,3-葡聚糖和可得然胶为原料,通过降解法和化学修饰法制备水溶性β-1,3-葡聚糖的研究及其应用进展怍一综述。Water-soluble β-1,3-glucan exhibits unique biological and pharmacological activities.In this paper,the preparation of soluble β-1,3-glucan from insoluble β-1,3-glucan produced by Saccharomyces cerevisiae or curdlan through chemical modification and degradation is reviewed.In addition,the potential application of soluble β-1,3-glucan is introduced.
