摘  要:采用反式高效液相色谱法检测6种食品中的人工合成着色剂。样品经甲醇一饱和氯化钠溶液提取后,甲醇-乙酸铵溶液梯度洗脱,在各色素可见光区最大吸收波长处测量吸光度,能够有效避免杂质干扰,减小净化难度,基本满足糕点、饮料、酱菜、肉制品等中合成着色剂的检测需求。对于葡萄酒、酱汁、糖果等多种基质干扰较重的食品中合成着色剂的检测,样品需经聚酰胺小柱净化后上机分析。该方法检出限为0.05mg/kg,回收率86.2%~97.5%,且重现性好,基本满足日常检测中对食品中合成着色剂的检测需求。Six kinds of synthetic colorants were determined by HPLC. Samples were extracted by methanol-saturated sodiumchloride solution and methanol. Chromatographic mobile phase was methanol-ammonium acetate solution and gradient elution.Synthetic colorants were tested at the maximum absorption wavelength of visible light absorbance measurements, respectively.The results showed that the wavelength of maximum visible absorption measurement could effectively avoid the interference ofimpurities, and reduce the difficulty of purification. That was basically enough for synthetic colorants testing in cakes, drinks,pickles, meat, etc. For wine, sauces, candy, etc., they need be purified by polyamide column so that impurities could be significantlyreduced in the chromatography. This was a reproducible method for synthetic colorants test. The detection limit was 0.05 mg/kg with polyamide column, and recovery rate reached 86.2% - 97.5%.
