摘 要:通过对越冬防护区福鼎大白茶相关因子检测,结果显示:相对于对照区,春茶鲜叶百芽重、产量、折干率及茶叶主要品质成分水浸出物、多酚类、氨基酸、咖啡碱、可溶性糖类含量均有不同程度的提高,且降低了酚氨比,有利于绿茶品质的形成,而夏茶变化不明显。这表明同一茶树品种在不同越冬防护条件下,它的物质代谢方向和速度是不同的,在停止防护措施后,此效应对春茶影响较明显,夏茶不明显。Through the test of related factors of Fuding Dabaicha in Winter protction area, it’s found that the hundred-bud weight, yield, wet-dry rate and the main quality index including water infusion, polyphenols, amino acid, caffeine and soluble sugar was improved compared with control. And the P/A rate was lowered. This above factors are befeficial for the quality of Spring green tea. The greenhouse protction is most effective, and it comes after with protective forestry, windbreak, cloth cover and dry grass cover. While on Summer green tea, the protection does not make obvious quality difference. The result showed that for one specified tea cultivar under different winter protection method, its metabolism direction and speed is different and it influences the Spring green tea quality significantly. While in Summer tea, the influence is not obvious.
