摘　　要：频发的食品安全事件使食品供应链核心企业面临食品安全风险的巨大挑战,食品供应链核心企业应如何进行食品安全风险防控,已成为一个有实践价值与理论价值的研究课题。文章以食品行业标杆企业为研究对象,采用严谨的案例研究法,探索性地建构食品供应链核心企业食品安全风险防控策略体系。研究结果表明,食品供应链核心企业应施行食品安全战略规划、食品安全内控基础、食品安全风险控制和食品安全信息科技四位一体的食品安全风险防控策略体系。Core enterprises in food supply chains are confronted with huge challenges of food safety risks due to frequent food safety af- fairs. The problem of food safety risk prevention and control of core enterprises in food supply chains has become a research subject of practical value and theoretical value. Taking benchmarking enterprises in food industry as objects of study and employing the rigorous case study method, the article explores the policy system of food safety risk prevention and control of core enterprises in food supply chains. The finding reveals that core enterprises in food supply chains should implement the four- in -one food safety risk prevention and control policy system by integrating four functions of food safety strategic planning, food safety internal control basis, food safety risk control and food safety information technology.
