摘 要:以苹果渣中提取的粗膳食纤维为原料,利用单螺杆挤压机进行挤压改性,以提高其中水溶性膳食纤维(SDF)含量.结果表明,经挤压改性后,苹果膳食纤维中的SDF含量显著提高.最佳挤压工艺条件为:加水量40%,螺杆转速780r/min,物料粒度20目,此条件下得到SDF的含量为24.0%.试验研究了改性前后苹果膳食纤维水合性质的变化,结果表明,与原料相比,改性苹果膳食纤维的持水力、结合水力和膨胀力都显著提高.In this study ,the dietary fiber of apple which extracted from apple pomace was used to modify by screw extrusion ,aiming to improve the content of soluble dietary fiber (SDF) in it .The results indicated that the content of SDF in apple dietary fiber was significantly im-proved after extrusion .The optimum conditions of extrusion process were as follows :the wa-ter content of 40% ,screw rotation speed of 780 r/min ,and material particle size of 20 mesh . Under these conditions ,the content of SDF can reach to 24 .0% .The differences of hydration properties between non-modified and modified material were also studied .And it was found that WHC ,WBC and SC of modified apple dietary fiber were significantly improved com-pared to the materials .
