摘 要:为全面开发利用枳椇,采用气质(GC-MS)联用技术对枳椇子油的总脂肪酸、结合型脂肪酸和游离型脂肪酸组成及相对含量进行测定,运用DPPH和Fenton法对枳椇子油的体外抗氧化活性进行检测与评价。结果表明:枳椇子油中检出总脂肪酸15种,主要成分为亚油酸和(Z)-9-十八烯酸(油酸),其含量分别为28.472%和26.292%。枳椇子油中结合型脂肪酸与游离型脂肪酸的比例为48.5∶1,其中以(Z)-9-十八烯酸(油酸)为主要成分的结合型脂肪酸6种,以亚油酸为主要成分的游离型脂肪酸15种。枳椇子油的体外抗氧化活性结果显示,对DPPH·自由基的清除能力随着浓度增加呈上升趋势,当浓度为15mg/mL时,清除率为91.3%;对羟自由基清除能力呈明显量效关系,当浓度为6mg/mL时,清除率为91.7%,均较橄榄油效果好。For the development and utilization of H.dulcis composition and content constituents of fatty acids,conjoint fatty acids and content of free fatty acids were identified by GC-MS.The antioxidant activities of the H.dulcis constituents of fatty acids in vitro were tested by the Fenton and DPPH free radical (DPPH ).The results showed that 15 fatty acids were identified in seed oil of H.dulcis,in which the main components were the unsaturated fatty acids with linoleic acid and (Z)-9-Octadecenoic acid (oleic acid).The weight rate of conjoint and free fatty acids was 48.5∶1,in which 15 fatty acids exist in free acids with linolenic acid as main constituent and 6 conj ugated type fatty acids with a maj or component oleic acid.The results of antioxidant acidities showed that seed oil had does-effect relationship at the scavenging activities of hydroxyl radical and DPPH radical invitro.When the concentration of sample was 6 mg/mL, the hydroxyl radical scavenging rate was 91.7%;the concentration of sample was 15 mg/mL,DPPH radical scavenging rate was 9 1 .3%,and the above results were better than those of olive oil.
