摘　　要：本文对从本地市场采集的正在使用中的炸油进行了激光诱导的荧光光谱测量 ;讨论了荧光强度和油的质量的关系。The fluorescence spectra stimulated by laser in several kinds of frying oil and fresh oil that collected locally were measured.The relation between fluorescence intensity and the quality of oil has been discussed
